Sufiyani Biryani, a lesser-known Hyderabadi delicacy, dates back to the Nizams. Mild, creamy, and aromatic, it avoids red chillies and heavy spices, using milk, curd, and nuts instead. Its pale colour and delicate flavour set it apart. Though rare, it’s available at select restaurants like Abidi’s and Mak’s Kitchen, and through special wedding caterers.
